1. Low-Carb Keto Cupcakes

Ingredients:

  • Coconut flour (one-third cup)
  • Unsweetened cocoa powder (half cup)
  • Powdered erythritol  (one-quarter cup)
  • Baking powder (one teaspoon)
  • Baking soda (half teaspoon)
  • Salt (one-quarter teaspoon)
  • Whole eggs (four)
  • Vanilla extract (one teaspoon)
  • Stevia extract (eight drops)
  • Extra light olive oil (four tablespoons)
  • Unsweetened almond milk (half cup)

Directions:

Preheat oven to 350 degrees Fahrenheit, and then prepare a muffin tin simply by greasing or baking with cupcake liners.

Get a medium bowl, and whisk these Ingredients together – coconut flour, cocoa powder, erythritol, baking powder, baking soda, and salt.

After that, pour in eggs, vanilla extract, stevia, olive oil and almond milk. Mix them until well combined. Let it sit for about 8 minutes.

Perhaps the mixture is thicker than you prefer, you can add two tablespoons of water to batter until the desired consistency is reached.

Now, add two tablespoons of batter into each tin. Do the baking for about 22 minute, or until the toothpick becomes clean.

Lastly, frost it with your desired low carb frosting and enjoy!

2. No Bake Low Carb Lemon Strawberry Cheesecake Treats

Ingredients:

  • Cream cheese, softened (three oz)
  • Zest of one lemon
  • Heavy whipping cream (three-quarter cup)
  • Swerve sweetener (one-third cup)
  • Lemon extract (two teaspoons)
  • Strawberries, large (two pieces)

Directions:

Get a mixing bowl, and add these Ingredients – cream cheese, sweetener and whipping cream. Beat it on high until it becomes smooth and creamy.

Pour in lemon extract plus the lemon zest and mix it very well.

After that, take a strawberry and chop into little pieces. Slice the second strawberry into thin heart shaped pieces.

Fill the jars halfway with half portion of the cream cheese mixture you made earlier.

Make a nice layer by pouring in the chopped strawberry to the jars.

Now, top the strawberries with the other half of the cream cheese mixture.

The next thing is to make a flow pattern using the slices of the strawberry, on the top.

Take the lemon zest and sprinkle in the middle of each flower.

Lastly, refrigerate the mixture until ready to eat.

3. Vegan Coconut Macaroons

Ingredients:

  • Unsweetened shredded coconut, divided (two and a half cups)
  • Almond flour (half cup)
  • Monk fruit sweetener (or sweetener of choice) (half cup)
  • Aquafaba (half cup)
  • Vanilla extract (one teaspoon)
  • Almond extract (half teaspoon)
  • Pinch of salt
  • Vegan dark chocolate, melted (half cup)

Directions:

Preheat oven to 350 degrees F and line your baking dish with parchment paper. You can also use silicon mat.

Place one cup of coconut in the oven for about 10 minutes.

Add in the entire Ingredients to a large bowl plus the toasted coconut and mix evenly.

Place a tablespoon round cookie scoops on baking sheet, and then bake for about 20 minutes.

Melt down half cup of vegan dark chocolate. Immediately the cookies become cool, dip the bottoms and put them on parchment paper, and keep in the fridge for about 10 minutes.

Note: the refrigeration is required only when you are dipping them chocolate.

Lastly, serve with your desired non-dairy milk and enjoy!

4. Low Carb Pumpkin Cheesecake Mousse

Ingredients:

  • Cream cheese, softened (twelve ounces)
  • Unsweetened pumpkin puree (one to 15 ounce)
  • Erythritol (half cup)
  • Pure vanilla extracts (two teaspoons)
  • Pumpkin Pie Spice (two tablespoons)
  • Heavy cream (three-quarter cup)

Directions:

Get a large mixing bowl and combine the cream cheese and pumpkin puree in it. Using your hand, mix cream both of them together until you can no longer see any clumps and the mixture is smooth and creamy.

After that, pour in the remaining Ingredients – erythritol, vanilla extract, pumpkin pie spice and heavy cream. Mix everything together until well incorporated.

Keep in the refrigerator for about one hour, and then serve.

5. French Chocolate Mousse with Orange

Ingredients:

  • Orange, zested (one)
  • Dark chocolate, chopped into small pieces (seven ounces)
  • Strong brewed coffee (two tablespoons)
  • Eggs, separated (six)
  • Pinch salt (one)

Directions:

Get a mortar and pestle, and then grind the orange zest until it becomes a smooth paste.

Add in chocolate, coffee, and orange zest on top of a double boiler over simmering water.

Stir very well, and scrap down both sides with a rubber spatula so as to avoid scorching, until the chocolate melts, close to five minutes. Keep stirring until it becomes smooth

Remove from heat, and allow it to cool for a while.

After that, get a glass, metal, or ceramic bowl and beat egg whites and salt inside, until stiff peaks form.

Pour in egg yolks to the cooled chocolate mixture and begin to stir until everything is well combined.

Add in egg whites. In a careful manner, fold together using a spatula until well combined.

Add mixture into a large serving dish. Keep in the refrigerator for a minimum of 6 hours or overnight.

6. Keto Peanut Butter Cookies

Ingredients:

  • Smooth unsweetened peanut butter, melted (one and a half cups)
  • Coconut flour (one cup)
  • Keto-friendly brown sugar, e.g. Swerve (one-quarter cup)
  • Pure vanilla extracts (one teaspoon)
  • Kosher salt (Pinch)
  • Keto-friendly dark chocolate chips, e.g. Lily’s, melted (two cups)
  • Coconut oil (one tablespoon)

Directions:

Get a medium bowl, and combine these ingredients – peanut butter, coconut flour, coconut sugar, vanilla, and salt. Stir until it becomes smooth.

Now, line a baking sheet with parchment paper. With the aid of a small cookie scoop, form mixture into rounds and after that press down in a light manner to flatten, and put it on baking sheet. Freeze for one hour, or until firm.

After that, whisk together the duo of melted chocolate and coconut oil, in a medium bowl.

The next thing is to get a fork, dip the peanut butter rounds in chocolate chips until it becomes completely coated, and then place back in the baking sheet.

  • Unsweetened almond milk or coconut milk (two cups)
  • Unsweetened coconut flakes, divided (half cup)
  • Unsweetened cocoa powder (one-quarter cup)
  • Erythritol (one-quarter cup)
  • Pure vanilla extracts (one teaspoon)
  • Chia seeds (one-third cup)
  • Crushed roasted almonds (two tablespoons)
  • Sugar-free dark chocolate chips. Optional (one-quarter cup)

Directions:

Combine the following ingredients in a blender – the unsweetened milk, coconut flakes, cocoa powder, erythritol, and vanilla extract. Mix until well combined.

Get a large mixing bowl, add in the mixture and the chia seeds, and then whisk thoroughly for about 2 minutes.

After that, transfer the pudding to four different serving bowls or cups and keep in the refrigerator for about 2 hours.

For more sweetness, top it with almonds, coconut flakes, and dark chocolate chips, before serving.

8. Keto Avocado Pops

Ingredients:

  • Ripe avocados (three)
  • Juice of 2 limes (one-third cup)
  • Swerve or other sugar alternative (three tablespoons)
  • Coconut milk (three-quarter cups)
  • Coconut oil (one tablespoon)
  • Keto friendly chocolate (one cup)

Directions:

Get a blender and combine the avocados with lime juice, swerve, and coconut milk. Keep blending until it becomes smooth, and then pour into Popsicle mold.

Keep in the freezer for about 6 hours, or until becomes firm.

Get a medium bowl, and then combine chocolate chips as well as coconut oil.

Keep in the microwave until melted, and then allow it to cool to room temperature.

Lastly, dunk frozen pops in chocolate, serve and enjoy!

Ingredients:

  • Unsweetened cocoa powder, for garnish (two tablespoon)
  • Swerve, or any other keto-friendly sugar (two and a half teaspoon)
  • Water (one and a quarter cups)
  • Heavy cream (one-quarter)
  • Pure vanilla extracts (one and a quarter teaspoon)
  • Whipped cream, for serving

Directions:

Get a small saucepan over medium-low heat and whisk these ingredients together – cocoa, swerve, and two tablespoons water. Whisk until fully smooth and dissolved.

After that, increase the heat to medium, pour in the remaining water and cream, and then whisk infrequently until becomes hot.

Lastly, stir in the vanilla, and pour inside a mug.

Serve it with whipped cream and a dusting of cocoa powder.
