Ingredients:
- Unsweetened shredded coconut, divided (two and a half cups)
- Almond flour (half cup)
- Monk fruit sweetener (or sweetener of choice) (half cup)
- Aquafaba (half cup)
- Vanilla extract (one teaspoon)
- Almond extract (half teaspoon)
- Pinch of salt
- Vegan dark chocolate, melted (half cup)
Directions:
Preheat oven to 350 degrees F and line your baking dish with parchment paper. You can also use silicon mat.
Place one cup of coconut in the oven for about 10 minutes.

- Orange, zested (one)
- Dark chocolate, chopped into small pieces (seven ounces)
- Strong brewed coffee (two tablespoons)
- Eggs, separated (six)
- Pinch salt (one)

Add in chocolate, coffee, and orange zest on top of a double boiler over simmering water.
